Cupcakes to Melt Your Heart heart

Cupcakes are one of the most satisfying desserts around. For starters, you don’t have to share—you get to eat them all by yourself and there’s no agonizing about how big a slice to have like with a full-size cake. Kids love cupcakes and the inner kid in all grown-ups does too. They are a perfect way to say, “I love you” on Valentine’s Day.

Funnily enough, cupcakes were one of the first convenience foods. Cooks in the 19th century started making cakes in smaller pans like teacups to cut down on the long baking time in a hearth oven. Today’s home bakers also appreciate how fast and easy cupcakes are: standard sized cupcakes will bake in 20 minutes and miniature cakes in 8 to 10 minutes.

Just fill a pastry bag with low-fat cream cheese or jam, about one tablespoon of filling for each cupcake. Poke a hole in the center with a knife and pipe in the filling.

  • When you are making cupcake batter, have all of the ingredients at room temperature. It’s easier to mix that way and more air is incorporated into the batter, making the cupcakes tender and light.
  • Use cake flour instead of all- purpose flour for lighter, tender cupcakes.
  • Just about any yellow or chocolate cake recipe can be used to make cupcakes. Fill muffin pan cups half to two-thirds full of batter. One standard sized cupcake makes two miniature cupcakes, a perfect treat for little kids.
  • Paper or silicone cupcake liners save on clean up and keep cupcakes moist longer.
  • Brush cupcakes with sugar syrup, about a tablespoon per cupcake, to add flavor and keep them moist for several days.
  • For a fast, easy decoration, dust cupcakes with powdered sugar.
