Throw This In The Pot...

Mary Sue Milliken and Susan Feniger's advice for making an incredible soup in 25 minutes:

  1. Start with a small amount of fat — olive oil, grapeseed oil or butter
  2. Make a base by caramelizing onion, carrots, celery or herbs
  3. Jazz it up with a bold flavoring like garlic, ginger, red curry paste or chipolte chilies
  4. Add a major ingredient like tomatoes, lentils or butternut squash
  5. Pour in liquid like water, stock, or half canned stock and half water

Ginger tomato soup
Carrot lentil soup
Curry butternut squash soup


  • Really caramelize the onions
  • Try to complement the main vegetable
  • Go half and half (half stock and half water) if you're using canned stock and add a bit of bacon or ham hock
