Cheese Blintzes

Blintzes, the Jewish relative of the French crpe, are delicious served for breakfast or dessert. Most blintzes are filled with either a sweet or savory combination of ricotta, cream cheese and eggs. Blintzes are so tender and delicious that it's easy to wolf down several of these tasty little parcels without realizing how many calories you're racking up.

With this in mind, we decided to give a traditional cheese blintz recipe a makeover. With a few changes, FoodFit executive Chef Bonnie Moore was able to cut almost 70 calories, reduce the fat by half and knock out five grams of saturated fat! The cholesterol was also slashed by 47 milligrams. Now here's a light cheese blintz that even a Jewish grandmother would love!

Bonnie was able to make these changes by:

  • Replacing the ricotta cheese and regular cream cheese with cottage cheese and light cream cheese
  • Using low fat skim milk instead of whole milk
  • Eliminating the egg yolks and using one whole egg in the filling
  • Using cooking spray instead of butter
  • Choosing non-fat sour cream for the topping

cup ricotta
8 ounces cream cheese
cup sugar
1 teaspoon vanilla extract

cup raspberry preserves

1 cup skim milk

pound light cream cheese
pound low-fat cottage cheese
