Beef and Mushroom Stroganoff

Shirley from Memphis, Tennessee sent in this favorite recipe for a nutrition facelift from Executive Chef Bonnie Moore. The changes we made allow Shirley to keep this recipe from a beloved coworker dear to her heart—while keeping it healthy.

Bonnie slashed more than half the fat and sodium (and 70 percent of the artery-clogging saturated fat) with the following Makeover Techniques:

  • Substituted a leaner cut of beef (cuts cooking time by more than half!)
  • Substituted non fat sour cream for regular sour cream.
  • Replaced higher sodium tomato soup with chopped fresh tomatoes.
  • Replaced higher sodium canned mushrooms with more fresh mushrooms.
  • Served the stroganoff with noodles.

1 pound round steak
1 cup sour cream
1 can tomato soup
6 oz. canned mushrooms

1 pound lean beef sirloin
1 cup non fat sour cream
1/2 cup chopped tomatoes
1 pound fresh mushrooms
