Tangy and sweet, with a buttery crust, lemon squares often show up at bake sales, picnics and spring luncheons. You may think that since they're made with lemons this dessert would be light, but that would be wishful thinking. Traditional lemon squares are loaded with butter, eggs and sugar; resulting in a high calorie, high fat treat.
FoodFit Executive Chef Bonnie Moore undertook the challenge of giving this all-American dessert a facelift. With a few easy changes we were able to reduce the calories by nearly 50 percent and shrink the fat by two-thirds.
Bonnie was able to create this updated lemon square recipe by:
- Reducing the amount of butter used in the crust
- Eliminating the cream cheese from the crust
- Reducing the amount of sugar in the topping
- Increasing the amount of lemon juice and lemon zest for added flavor
