Potato Latkes

Potato latkes, or pancakes, are a traditional Chanukah treat, but like many holiday foods, they are high in fat and calories. We've taken a traditional fried potato latke recipe and given it a face-lift. With a few simple changes by FoodFit Executive Chef Bonnie Moore, we were able to cut more than 50 calories per serving and reduced the fat by a whopping 22 percent! By simply changing the cooking method from deep-frying in oil to pan-frying with cooking spray, you can significantly reduce the calories and fat.

Bonnie was able to make these changes by:

  • Cutting out the cooking oil and using olive oil spray instead. In traditional latkes, the oil used for frying contributes to almost all the fat.
  • Adding teaspoon of baking powder for fluffier pancakes.
  • Using egg substitutes and egg whites instead of whole eggs, which are high in cholesterol and fat.
  • Replacing full fat sour cream with non-fat or low fat sour cream.

Egg substitute or 2 whole eggs
plus 4 whites
Olive oil spray (or 2 TBSP olive oil)
Non-fat or low fat sour cream
