Thanks for Foodfit - it is helping me daily to be more aware of the "2, 3, 4" servings requirements (2 protein, 3 fruit, 4 veggies). Nutrition aside, do you have an easy fudge recipe? I made Eagle Brand "Decadent Fudge" (very easy and good), but it is only carried at Publix over the holidays. I can buy it online at a Northeastern USA store, but I'd prefer to make it myself to save the expense if I can do as well as the Eagle box. I'm asking for your help b/c I tried to duplicate the boxed ingredients and recipe, but the 2 Tbsp of butter didn't mix well and I had to heat the cooled fudge and dab the butter off. (Yes, I ate it anyway, and yes, you can suggest a 12-step fudge addiction program but suggest a fudge recipe too--smile.) I used dark chocolate chips instead of plain chocolate chips like the box used, so maybe I wouldn't have that problem if I left off the butter next time with dark chips or if I used plain chips and kept the butter--I'm not sure. The ingredients are sweetened condensed milk (forgot to write down the amount, 6 oz maybe?), 1 tsp vanilla, 1 and 1/4 cups of small plain chocolate chips, 1/3 cup walnuts, 2 Tbsp butter. Put the butter, milk, & chips in a glass bowl (don't stir), microwave on high for 1 minute; take from microwave, stir the milk, chips, butter and add walnuts and vanilla; stir again. Spread in a dish lined with wax paper and chill for 2 hours. A recipe using soy milk and brown sugar would be pleasing instead of sweetened condensed milk b/c then I could control the amt of sugar. Thanks!

Update 2/5: I found Eagle Brand Decadent Fudge in the Wal-Mart grocery section. Yum. Glad to have it back. Hope Wal-Mart carries it year 'round. Best regards, Patt Community © 2000-06 Snitz Communications Go To Top Of Page
