Does anyone have any good low carb snack suggestions? Nuts are great, but I need more variety.

I know this is long but the post from mamabinks with an e-mail addy for low carb recipe won't be working so I thought I would just post the recipe. This is the e-mail I would send out.
Here is the recipe you requested. It is from the Pampered Chef "It's Good For You" cookbook, which has a lot of other great recipes not all low in carbs but all good for you. You will notice that it tells you to used different tools in making it. These are recommended by Pampered Chef. I do have a friend that has a website if you would like to check it out and see what some of the stuff is. I think you can see the product there. Just go to
Anyway, here it the recipe.

Mint Chocolate Meringues

2 large egg whites, room temperature
1/4 teaspoon cream of tartar
1/2 cup sugar
2 tablespoons unsweetened cocoa powder
1/8 teaspoon peppermint or mint extract

1. Preheat oven to 275. In Classic Batter Bowl, beat egg whites on high speed of electric mixer until very foamy, about 20 seconds. Add cream of tartar and continue to beat 1-2 minutes of until soft peaks form. ( Tips of peaks will curl down when beaters are lifted.) continue beating on high speed, gradually adding sugar in a slow, steady stream. (Do not add all of the sugar at once.) Continue beating on high speed 3-4 minutes or until sugar is dissolved, mixture is glossy and stiff peaks form. ( Tips of peaks will remain upright when beaters are lifted.)

2. Place cocoa powder in Flour/Sugar Shaker; sprinkle over egg whites. Using Classic Scraper, gently fold cocoa powder into egg whites just until cocoa powder disappears. Gently fold in peppermint extract.

3. Cover Rectangle Stone with Parchment Paper. Attach open star tip to Easy Accent Decorator; fill with meringue mixture. Pipe mixture into small rosettes, about 1 1/2 inches in diameter, 1 inch apart. Refill decorator as needed.

4. Bake 1 hour. Meringues should look dry and have small cracks on the surface. Turn oven off and leave meringues in oven with door slightly ajar for 30-60 minutes or until meringues are thoroughly dry.

Yield: 36 meringue cookies

Calories 35 (2% from fat)
Total Fat 0 g
Saturated Fat 0 g
Cholesterol 0 mg
Carbohydrate 8 g
Protein 1 g
Sodium 10 mg
Fiber 0 g

Diabetic exchanges per serving ( 3 meringues):
1/2 starch (1/2 carb)

Variation: Cinnamon Chocolate Meringues:
Omit peppermint extract. Combine 1/4 teaspoon ground cinnamon and sugar in Step 1. Proceed as recipe directs.

A wedge of Laughing Cow light cheese spread in 2 stalks celery:) Crunchy, low-fat and carb, has calcium and a little protein.

I like to mince one medium apple and stir it with one-one and a half tbs. of boiled barley flakes, if you add some cinammon, taste is delicious.This can keep you fully for some time, also it is very healthy and good for stomach.

Ok I found the ultimate low carb snack....chocolate....and pork rinds...a lot of people don't like pork rinds but they have been my best friend for curing snack attacks while Ive been low carbing. And I was looking for different flavors and found someone that makes them dipped in Belgian chocolate....sounds weird I know but YUM!!!! This is my new favorite snack...and get this...0 carbs in dark chocolate!!! I'm in heaven! The only place I found them is because they make them themselves. Oh they are called Pork Chocs as well. If you want variety...there you go!!! [:D]

I have a great recipe if you have a sweet tooth. Its for Mint Chocolate Meringues. They have no fat and only 8 carbs for 3 cookies.They are small but if you eat them slow and enjoy each bite they do the trick. If anyone wants the recipe you can write me at I would post it here but for some reason I have to type each letter 10 times before it comes on the screen.

I agree with the string cheese. Also the Atkins breakfast bars are a lifesaver. Just got home from work and hungry and grabbed the bar and staved off a carb slip. Sometime I will make myself drink 16oz of water before I grab something to eat-can't eat till I finish the water. The last snack that I have found helpful is celery stuffed with vegetable cream. I find that snacking on nuts help fight the afternoon hunger. There's also low carb. yogurt available. If all else fails I usually keep a small salad at hand that help me make to dinner time.

I like to have really fresh, good radishes that I dip into Kosher salt (just a little bit) and fresh cucumber slices also. Kafli makes a great high fiber flatbread-type cracker with is awesome with some spinach dip on it. Makes a great snack that has lots of fiber.

The string cheese suggestion is excellent!

I will usually snack on fresh fruit or vegatables.

I have found what helps me the most is a 20 oz glass of water.

One of my favorite snacks that I use to keep me going thru the day is 1-2 tablespoons of peanut butter (be sure to MEASURE!) along with a half an apple or half a banana or some other fruit/veggie. Or I will have a little bit of cheese and fruit. I keep hard boiled eggs on hand for those times when I know that something like fruit won't last long (fruit digests easily and you do not feel full for as long)... I will have a hard boiled egg with a small salad for a snack (little or no dressing).

try some fat free jello[:<>]and you could even have some whipped cream...just whisk heavy cream w/ splenda.
