It seems that I am always on the lookout for new ways to entertain my friends with delicious meatless menus. One of my favorite recipes that is great for a crowd is FoodFit's Roasted Eggplant Lasagna. Would love hearing other party ideas that are also meat free....

I enjoy eating meatless sometimes. Hard to get tasty recipes vegitarian style. I have found some easy to make recipes that have great flavor to boot.
They are more american style than true veggie :)

Tonight I am going to make "meatloaf".... ok, not really.... but sort of....
This is a recipe I adapted from an old favorite. I think it was called "German Meatloaf" or something.
I mix up a box of Falafel mix or veggie burger mix (Falafel mix is better). divide into four portions & wrap each portion around a boiled egg. Refrigerate for at least 15 minutes to "set up".
Heat a non-stick frying pan over medium heat. Spray each "meatloaf" with cooking spray and brown all sides in the pan. Careful when turning.
I serve this with a homemade mushroom sauce: Saute onions, garlic & mushrooms in a little olive oil. Add red or white wine and reduce. Add S & P, thicken with a little cornstarch (adding liquid as needed).
It's a fun recipe! I like to cut each "loaf" in half to show the egg inside.
(the original recipe called for ground beef and had you pour a jar of gravy over the top after browning)

KEWL! A veggie board!
I don't have much room at my home for dinner parties, but I will make some tasty vegitarian appetizers.
Of course the easiest thing to throw together is a cheese & fruit plate with 2 or 3 types of cheese, grapes, strawberries, sliced melon, whatever is in season and looks good and fresh.
Another lowfat appetizer is to slice a small zucchini thick enough so the disk does not flop and place a small amount of spaghetti sauce on it and 1/2 a cherry tomato, a slice of mushroom and/or some fresh basil. I also have sliced the zuchinni thinly and placed the whole set up on a water cracker.
Another favorite of the gang is when I use rice crackers. I dollop a tiny amount of peanut sauce on each cracker (the kind in a package that you make with coconut milk. Don't worry about the calories! You put a teeny tiny amount on each cracker - just enough for flavor.) and a sliver of fried tofu or a small cocktail shrimp and some alfalfa or bean sprouts! It's really pretty!
