Posted - 11/10/2005 : 5:21:42 PM There’s this new turkey recipe in Safeway grocery stores now where you can cook any size turkey up to 22 pounds in just two hours! This will for sure save A LOT of time on Thanksgiving!! If you go to the Safeway site you can find a store close to you. The recipe’s only available in the store. Has anyone tried it?

Posted - 12/01/2006 : 12:48:12 PM I have never heard of the 2 hour turkey, but I have heard of the 1 hour turkey and it is very moist. You must have a gas stove to do this recipe, and your turkey can be any size. Also you must have a roasting pan with roasting cover. Preheat your oven at temp of 450 degrees. Get your turkey prepared and seasoned and rubbed down the way you want. (Do not stuff the turkey, this recipe does not call for stuffing placed in the turkey) Place 1 quart of warm water in the bottom of the pan, with 4 celery stalks and a peeled onion stuck in the cavity of the turkey. Place the lid on the roaster and placed in the preheated oven for 1hr and 15min. Turn off your oven and do not open until the next morning. (AGAIN DO NOT OPEN THE OVEN UNTIL THE NEXT MORNING) I usually place my turkey in the oven at 9:00p and when I get up at 5:00a it is fully cooked ready to eat with a golden brown top. It is the best turkey that you will ever have with alot of turkey broth in which to make your gravy.

Posted - 08/02/2006 : 2:41:00 PM hi, i have done the 2 hour turkey and it is awesome! the only suggestion i have is make sure that your oven is clean as the high temperature will cause some smoking! the turkey was moist, full of flavor, and the family loved it! those of us who eat the skin were fighting over it, it was that good! i will certainly be baking turkey more often with this quick and easy method! give it a try folks you'll love it! that makes sense! You can always make stuffing in a separate dish and use low fat/sodium chicken broth or veg broth for more flavor.

You can find more information about the 2-Hour Turkey there as well as the recipe. There are a lot of specific things you have to do for it to work properly. One of them is do not stuff the turkey. FYI.

Herb-Seasoned Turkey Prep and Cook time: About 30 minutes prep time, 2 to 3 hours cook time, plus at least 30 minutes to rest. Makes: Allow 3/4 pound uncooked turkey per person
Ingredients 1 bunch fresh rosemary leaves (about 1 oz.) 1 bunch Italian parsley (about 4 oz.) 1 bunch fresh thyme leaves (about 1 oz.) 2 tablespoons Safeway SELECT Verdi Olive Oil 2 tablespoons Lucerne Sweet Cream Butter, melted 1/2 teaspoon salt 1/2 teaspoon pepper 1 16- to 18-pound turkey 3 whole bay leaves Easy Turkey Gravy (see Easy Turkey Gravy recipe in "Holidays" section)
Instructions
1. Mince rosemary leaves, parsley stems, and thyme to make 1 tablespoon each; reserve remaining sprigs for use in step 3. Combine oil, butter, minced herbs, salt, and pepper; set aside.
2. Preheat oven to 325°. Remove and discard leg truss from turkey. Pull off and discard lumps of fat. Remove giblets and neck; discard. Rinse bird inside and out; pat dry. Insert a meat thermometer through thickest part of turkey breast to the bone.
3. Tuck remaining fresh herb sprigs (see notes) and bay leaves inside body cavity. Place turkey, breast up, on a V-shaped rack in a 12- by 17-inch roasting pan. Retruss turkey legs, if desired. Brush entire bird with oil-herb mixture.
4. Roast turkey until meat thermometer registers 160°, 2 to 3 hours. If wing and leg tips start to get too dark, cover with foil.
5. Transfer turkey to a platter, reserving drippings for gravy. Let rest 15 to 30 minutes, then carve. Serve with Easy Turkey Gravy (see Easy Turkey Gravy recipe in "Holidays" section).
Nutritional Information Per 1/4 pound boneless cooked turkey; based on percentages of white and dark meat found in average turkey (including skin): 229 cal., 40% (92 cal.) from fat 32 g protein 10 g fat (3 g sat.) 0 g carbo (0 g fiber) 82 mg sodium 93 mg chol.
