Posted - 05/24/2004 : 2:03:14 PM I quit eating meat quite a while back. I never had cravings for meats therefore never felt the need to "substitute" meat for something. I never wanted to recreate the "texture" and "taste" of meat, but some people do!
One of my favorite meat substitutes is "Gimme Lean" soy sausage: http://www.lightlife.com/gimmelean.html
I will brown crumbled "Gimme Lean" Sausage in a non-stick pan sprayed with olive oil cooking spray and make a simple white sauce (with 2% milk) then stir the browned "sausage" into the sauce. Served over a piece of whole wheat toast, this is a "comfort food" for me! I never thought I would ever eat sausage gravy ever again!
My meat-eating sister in law really liked it and hopes her Diabetic husband and growing son will like it also. I explained that even if she gets them to use 1/2 Soy Sausage and 1/2 Pork Sausage then she has cut the calories and fat IN HALF!
What are your meatless "comfort foods"? Do you prefer to "replace" meat with something or do you prefer to just leave it out?
