Here is one of my favorite omelets to make for brunch or lunch. I made it after a friend and I had lengthy discussions trying to justify eating cheesecake for breakfast (not that it is all that hard to justify eating cheesecake at ANY time of day! LOL)....
2 large eggs (or 4 egg whites, or egg substitute)
2 Tablespoons water
3 large strawberries, washed and sliced
3 Tablespoons Cream Cheese, low fat or fat free (low fat is creamier)
Scramble eggs & water in a bowl and set aside (do not use milk, it separates when cooking and makes the egg flat... water makes for fluffier scrambled eggs, omelets and french toast). Spray a nonstick skillet with cooking spray and add eggs when the pan is hot. Let the eggs "set". You may need to tilt the pan to cover the bottom evenly. I sprinkle a little salt on the egg. Right before the eggs get "dry" (cooked on the top) place the cream cheese on one half of the eggs, then layer the strawberry slices on top of that. I grind some black pepper on top of that. Fold the other half of the eggs over the strawberries and let sit until the egg is all cooked. Slide onto a plate!! Garnish with fresh fruit (banana, strawberries, blueberries, kiwi, cantalope, etc.) and serve!! Add more calories with a small dallop of sour cream and/or strawberry preserves if you want. yummmmmm
You may adjust the amount of egg if you like. 3 egg omelets are a little easier to make in a larger pan like mine, but a little practice makes for a pretty omelet.

I am not sure about the egg substitute. The calculates seemed really high so I did not want to post it. I think it prolly varies.
