Posted - 08/02/2004 : 1:56:15 PM Normally a wilted spinach salad is made with bacon and bacon fat (!! yes. bacon fat!)... since I have not had meat (bacon included) in many many years, I have not had the opportunity to have a wilted spinach salad in FOR-EV-ER! I think it has been 14 years or so....
I saw a recipe on TV this weekend and adapted it.
Serves 2
2 hard boiled eggs, chilled, peeled and cut in quarters 1 package of baby spinach leaves (prewashed) 4-5 slices of soy bacon (fakin' bacon), chopped into small pieces 1/4 small red onion, chopped fine 3 Tablespoons Olive Oil 2 Tablespoons Cider Vinegar 1/2 teaspoon sugar salt & pepper
Place baby spinach leaves in a large salad bowl. Mix vinegar and sugar in a small bowl and set aside. Heat 1 Tablespoon olive oil in a pan and saute bacon pieces until crispy. add onion and cook until sligbhtly soft. Turn off heat. Add 1-2 Tablespoons olive oil, stir, then add cider vinegar, stir. Pour HOT dressing over spinach leaves and toss immediately. Be sure to mix well, over and over until spinach leaves are coated and some begin to wilt. Divide into bowl and garnish with hard cooked egg.
The "real" recipe calls for bacon and yo uare supposed to pour off all but 2 Tablespoons of fat. You can probably use real bacon (or ham?), pour off the fat and use olive oil in place of the fat if you like.
