I love potatoes! Now, I find that if I modify my ingredients to my old favorite recipe, I can eat them. Mind portion control though.
INGREDIENTS:
3 large potatoes 1 cup low-fat sour cream 4 pieces of very crisp bacon chopped into tiny pieces and patted dry 4 green onions chopped 1 cup grated light Cheddar cheese
FOLLOW ME:
Preheat oven to 350F degrees. Peel, cut and cook potatoes until tender. Drain. Add low-fat sour cream and whip until mixture is until smooth. Add chopped green onions and most of grated light Cheddar cheese and mix thoroughly. Spread potato mixture into 9" x 13" pan. Top with bacon bits and remainder of Cheddar cheese. Top the dish with freshly ground pepper. Cover dish with aluminum foil. Bake in 350F degree oven for 30 minutes.
This excellent Healthy Recipe is a side dish, which would compliment most any meal with chicken, beef, wild meat or fish.
