Ingredients: (4 servings)
2 Acorn squash
¼ cup toasted pine nuts
1 cup canned black beans (drained & rinsed)
2 scallions chopped
1 large tomato-diced
1 tsp ground cumin
Preheat oven to 425
Spray pan with cooking spray
Cut squash in half and remove seeds
Brush cut sides of squash with olive oil, and sprinkle with pepper
Bake squash – cut sides down – for 30-40 minutes
Mix: Pine nuts, beans, scallions, tomatoes, cumin, and pepper together.
When the squash is done, remove from oven, and fill centers with mix, bake for 10 minutes.
