I tried using whole wheat spaghetti and didn't like it, mushy. But I did try whole wheat penne and it was great. I'm trying to be more aware of the type of carbs I am eating. Any thoughts?

Try an organic Spelt pasta. Spelt is a whole grain, lower glycemic than whole wheat(doesn't spike your insulin like whole wheat does)and it's got a milder, not as "chewy" taste.
There are 2 very important things to note when eating whole wheat pasta:
1. Not all pastas are created equally. This means if you try one and you don't like it, try a different brand and you might be surprised. Personally, I have tried just about every brand in our local supermarket and the best one I have found is Catelli Healthy Harvest.
2. I can't explain it, but for some reason, when cooking whole wheat pasta you must follow the package directions exactly. It may seem like a lot of water for the amount of pasta you are cooking, but it does seem to allow the pasta to turn out the way it is supposed to.
