Ripe: yellow skin with deep orange flesh that yields to slight pressure. Sweet aroma.
Unripe: green skin, firm.

Easy Storage and Preparation
Store at room temperature. Remove skin. The peppery-tasting seeds are edible.

Best Uses
Ripe: Juice, salads, salsas, sorbets, and as a meat tenderizer in marinades. Use underripe fruits mixed with lime juice and chilies for Asian salads.
