Crazy for Chicken

Chicken remains one of the most popular foods -- it's a favorite because it's flavorful, healthy, versatile and reasonably priced. The ease and great taste of the chicken dishes here are sure to become firehouse favorites. We've picked recipes that you can whip up in 35 minutes or less, but these dishes are as notable for their delectability as for their speediness of preparation.

A word to the wise—chicken, like any meat, demands safe handling practices. Always wash any kitchen utensils, chopping boards or other surfaces that touch chicken and of course, wash your hands after handling raw chicken. See our Cook it Safe Calculator to find out how long your bird should bake.

15 Minute Suppers

If you don't want to spend much time in the kitchen, try our Herbed Chicken Scaloppine. It's a cinch to make. You simply flatten chicken breasts, press them with herbes de Provence and cook them in a skillet with a touch of olive oil. It's that easy, and quite tasty.

A little fancier, but just as quick is our Chicken Piccata. Capers and lemon co-star in this tasty dish. Chicken with Sun-dried Tomatoes and Capers is another fabulously simple supper. Steamed Rice is a good accompaniment to all three dishes.

Good Grilling

Fire up the grill for our Chipotle-Herb Chicken Breasts with a Southwestern flair. Chipotle pepper, parsley, cilantro and garlic are the makings for a zesty, low fat rub. Coat the chicken breasts, place them on the grill (or broiler), and get ready to dig in.

What's cooking? Try our Maple Glazed Barbecue Chicken. It features a tangy, homemade blend of Worcestershire sauce, hot sauce and maple syrup. The sweet-hot taste really infuses the chicken breasts.

On the Range

Spicy Noodles with Chicken and Spinach are a winner. The spice comes from an Asian-inspired mix of soy sauce, ginger, garlic and red pepper flakes. It's a yummy, one-pot meal.

Or head to Sicily with our Chicken and Mushroom Marsala. Chicken breasts and mushrooms simmer in the rich, smoky, fortified wine from Italy. You can make both these dishes in well under an hour.
