Spinach and Mushroom Lasagna


Lasagna is a traditional Italian comfort food that's typically loaded with cheese and high in fat and calories, but this doesn't mean that you can't fit it into a healthy diet. With the help of FoodFit's Chef Bonnie Moore, we've cut the fat and calories so that you can still enjoy this wonderful favorite.

Our revamped lasagna recipe cuts 400 calories, 25 grams of total fat, and 14 grams of saturated fat from the original. The cholesterol dropped a whopping 143 milligrams! Bonnie was able to make these substantial changes by:

  • Reducing the total amount of cheese that was used, and also using low fat cheeses.Eliminating the eggs.
  • Adding additional vegetables and breadcrumbs to increase the flavor and add texture.

1 pound grated Mozzarella

1 cup shredded low-fat mozzarella cheese
1/2 cup breadcrumbs
