Recipe Makeover: Lemon Bars

Sweet and tangy with a buttery crust that melts in your mouth, lemon bars are a super delicious summertime dessert. You may try to tell yourself that they’re a light treat as you reach for seconds, because they’re made with lemons. But that’s wishful thinking. Lemon bars are usually loaded with butter, eggs and sugar for a high- calorie, high- fat dessert.

We consulted with Food Fit Executive Chef Bonnie Moore, who updated this classic so it would be fairer to your waistline. Chef Bonnie reduced the amount of butter in the crust and reduced the amount of sugar in the topping. She also added more lemon juice and lemon zest for more flavor.

The recipe makeover lemon bars have about half the calories and two-thirds less fat than traditional lemon bars, but you’d never know it when you eat them!

Main Ingredients
Crust
1 cup flour
¼ cup confectioners' sugar
6 tablespoons butter
3 tablespoons cream cheese

Topping
1 cup sugar
3 tablespoons flour
1/4 cup lemon juice
1 teaspoon lemon zest
2 eggs
1 tablespoon confectioners' sugar

Main Ingredients

3 eggs
¾ cup sugar
2 teaspoons lemon zest
1/3 cup lemon juice
3 tablespoons flour
