Caesar salad is a firehouse favorite because it fixes up quick and is full of flavor. Grilled chicken Caesar salad is one of the signature dishes of fire fighter chef Jose Fuste, Montgomery County Local 1664. Unfortunately, the ingredients in a classic Caesar can add up to more fat, calories and sodium than most people want from a salad. But with some simple substitutions, the Caesar gets a whole lot healthier.
FoodFit Executive Chef Bonnie Moore uses roasted garlic instead of raw egg (reducing calories, fat and the potential for foodborne illness) in her recipe makeover. She also uses chicken broth in place of some of the olive oil and switches to anchovy paste rather than anchovy fillets in oil. The result: a better-for-you Caesar that tastes great!
