Pumpkin Soup

What better way to start Thanksgiving dinner than with this delicious, seasonal soup. Usually rich and creamy, weve made substitutions that keep the flavor but cut the fat by a whopping 90 percent and the calories by more than two-thirds! Our makeover also reduces the cholesterol and the sodium. Its a healthy starter to an often rich holiday meal.

Main Ingredients
2 tablespoons butter
1 onion, diced
2 carrots, peeled and diced
1 apple, peeled and diced
2 cups fresh pumpkin, roasted and diced, see note below
1 tablespoon sage leaves
3 cups chicken broth
1 cup heavy cream
A pinch of both salt and freshly ground peppere

1 onion, diced

3 cups low sodium chicken broth
1 cup 1% milk
