Third Alarm Chocolate Covered Raisin Oatmeal Cookies

Ingredients

1 cup butter, softened
¾ cup brown sugar, packed
¾ cup sugar
2 teaspoons vanilla extract
2 eggs
2 cups flour
1 teaspoon baking soda
2 cups old fashioned oats
1 cup semi-sweet chocolate chips
1 ¼ cups chocolate covered raisins

Cooking Instructions

Preheat oven to 350 degrees. Beat butter, sugars and vanilla in large bowl until creamy. Add eggs and beat well. In separate bowl, stir together flour and baking soda; set aside. In a blender or food processor, finely chop oats until they are the texture of flour. Stir oats into dry ingredients and add to butter mixture; mix well. Stir in chocolate chips abd chocolate covered raisins. Drop by tablespoons onto greased cookie sheets. Bake for 10 to 11 minutes or until tops are golden brown. Cool to room temperature on cookie sheets.

Makes about 2 ½ dozen cookies.
