  • Season the beef, dredge it in flour and begin searing it in a heavy soup pot.
  • Add the rest of the ingredients, from the onions to the beer.
  • Add the Worchestershire sauce, the tomatoes and their juices and the beef broth and bring to a boil.
  • Cook until the meat is tender, about an hour.
  • Add the carrots and potatoes and cook until the vegetables are completely tender, about 15 minutes more. Add the peas and cook until warmed through.
  • Adjust the seasonings and serve in a large tureen. Serve the crusty bread and salad on the side.
