Broiled Tomatoes
1 teaspoon olive oil
pinch of salt
freshly ground black pepper
1/2 teaspoon chopped, fresh herbs (optional)
2. Slice the tomatoes in half lengthwise and place them, skin side down, on a cookie sheet. Drizzle each half with olive oil and season liberally with salt and pepper.
3. Place the cookie sheet in the oven on a rack that is about 4 inches away from the heat. Broil until the tomatoes brown slightly, about 2 to 4 minutes.
4. Remove the tomatoes from the oven and sprinkle with fresh herbs if desired.
