Gambas Al Ajillo (Garlic Shrimp)
4 large cloves garlic, finely minced
1 teaspoon hot pepper flakes
1 pound medium shrimp, shelled and deveined
2 tablespoons fresh lemon juice
2 tablespoons dry sherry
1 teaspoon paprika
salt and freshly ground black pepper
chopped parsley
2. Increase the heat to high. Add shrimp, lemon juice, dry sherry and paprika, stir well and sauté quickly, about 3 minutes. Sprinkle with salt, pepper and parsley and serve at once.
Note: You can make this dish with squid, cleaned and cut into rings or with whole button mushrooms.
