8 loin lamb chops, trimmed of fat
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons freshly chopped mint
1. Season the lamb chops with salt and pepper.
2. Spray a large sauté pan (large enough to accommodate all the chops) with non-stick cooking spray over medium-high heat. Add the chops and lower the heat to medium. Cook until well-browned on one side, about 5 to 6 minutes. Turn the chops over and cook 2 to 3 minutes more.
3. Sprinkle the chopped mint over the chops, just prior to serving.
