4 halibut steaks, about 4 - 5 ounces each
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 tablespoons olive oil
1 teaspoon lemon zest
1. Season the halibut steaks with salt, pepper and lemon zest, then drizzle with olive oil.
2. Preheat the oven to 350º F.
3. Place a sauté pan large enough to accommodate all the steaks over medium-high heat. Add the halibut and lower the heat to medium. Sear the steaks about 3 minutes per side and then place in the hot oven to finish cooking for about 5 to 6 minutes depending on the thickness of the fish.
