Lobster and Artichoke Sandwiches on Focaccia
For the lobster salad:
4 ounces cooked lobster meat2 ounces non-fat mayonnaise
1 ounce canned artichoke hearts, rinsed and chopped
salt and pepper to taste
For the sandwich:
1 small loaf of focaccia, sliced in half1 lettuce leaf, green leaf, bibb or romaine, shredded
1. In a mixing bowl, combine the lobster, mayonnaise, artichoke hearts, salt and pepper.
For the sandwich:
2. Lay the focaccia slices out on a work surface and spread the lobster mixture on the sandwich. Top the sandwich with the shredded lettuce and place the focaccia top on the sandwich.
3. Cut the sandwich in half on the diagonal and serve.
