Shrimp Salad Sandwiches on Focaccia

This recipe serves: 
For the shrimp salad:
1/4 pound small or medium shrimp, steamed, peeled and deveined, then coarsely chopped
2 tablespoons mayonaise, non-fat
1 tablespoon finely diced celery
1 tablespoon finely diced, sweet onion
1/4 teaspoon lemon zest
salt and pepper
For the sandwich:
1 small loaf focaccia, sliced in half
1 lettuce leaf, green leaf, bibb or romaine, shredded
1 large slice ripe tomato, sliced very thin
Cooking Instructions
For the shrimp salad:
1. In a mixing bowl, combine the shrimp, mayonnaise, celery, onion and lemon zest. Add salt and pepper to taste.

For the sandwich:
2. Lay the focaccia slices out on a work surface and scoop the shrimp mixture on to the sandwich. Top the shrimp mixture with the shredded lettuce and a slice of tomato. Place the focaccia tops on each sandwich.

3. Cut the sandwich in half on the diagonal and serve.
