Turkey and Roasted Red Pepper Sandwiches on Focaccia
2 teaspoons minced, sweet onion
1 teaspoon freshly chopped tarragon
1 small loaves, whole grain focaccia, sliced in half
3 ounces sliced smoked turkey breast
1 slice roasted red bell pepper, from a jar
1 lettuce leaf, green leaf, bibb or romaine, shredded
2. Lay the focaccia out and spread the cream cheese mixture on each of the slices. Place the turkey on the sandwich and place the slice of the roasted red pepper on the sandwich and then top with the shredded lettuce. Place the focaccia top on the sandwich.
3. Cut the sandwich in half on the diagonal and serve.
