Basic Beef and Vegetable Kebabs
3 bamboo (soaked in water) or metal skewers
1/2 large red bell pepper, cut into 1-inch cubes
1/3 large Vidalia onion, cut into 1-inch cubes
4 small button mushrooms
1/3 medium zucchini, cut into 1-inch cubes
1 teaspoon olive oil
salt, to taste
freshly ground black pepper
2. Thread 1 of the skewers with the beef tips and 2 of the skewers with various vegetables. Brush the skewers with olive oil and season with salt and pepper.
3. Grill the skewers on each side until nicely browned and cooked to the desired doneness, about 10 to 12 minutes for medium on the beef and about 8 minutes for the vegetables.
Serving Size: 1 beef kebab and 2 vegetable kebabs
