3 medium zucchinis, sliced in quarters lengthwise
2 teaspoons olive oil
kosher salt to taste
freshly ground black pepper
1. Preheat the oven to 400°F.
2. Brush the zucchini strips on all sides with olive oil and season with salt and pepper.
3. Spread the zucchini strips out on a baking sheet in a single layer.
4. Roast on the top rack of the oven until they begin to get tender and golden, about 25 to 30 minutes.
