Spinach with Chickpeas
1 cup diced onions
1/4 teaspoon ground cinnamon
1 1/2 teaspoons ground cumin
1/4 teaspoon ginger
pinch of cayenne pepper
1 1/2 cloves garlic,minced
1 1/2 cups peeled, seeded and diced tomatoes
1 1/2 pounds spinach,stemmed, washed and coarsely chopped
1 1/2 cups cooked chickpeas (garbanzo beans)
salt to taste
freshly ground black pepper
2. Add garlic, spices and tomatoes and cook for 2 minutes, stirring from time to time.
3. Add spinach in batches, stirring often to moisten the leaves, until barely wilted. Stir in chickpeas and simmer for 5 minutes, stirring often. Season with salt and pepper.
