Old-Fashioned Turkey Soup
1 onion, chopped
1 carrot, chopped
2 stalks celery, chopped
1 bay leaf
10 black peppercorns
salt to taste
1 cup diced carrots
1 cup diced celery
2 cups diced, cooked turkey
1 cup cooked noodles, such as orzo or egg noodles
2. Strain the broth, return it to the pot and season with salt.
3. Add the carrots and celery. Simmer until the vegetables are tender, about 10 minutes.
4. Add the cooked turkey and noodles, heat thoroughly and serve.
