Sparkling Ginger-Peach Iced Tea
1 cup boiling water
2 cups ice cubes
6 ounces ginger ale
2 peach slices, for garnish
2 mint sprigs, for garnish
2. Add the ice cubes to the tea and let cool (uncovered). When the tea has cooled to room temperature, transfer it to a pitcher, cover and store in the refrigerator until ready to serve.
3. When ready to serve, fill two tall glasses with ice. Fill the glasses 3/4 full with tea and top them off with ginger ale. Garnish each glass with a peach slice and mint sprig.
