1/2 cup frozen raspberries, thawed
2 tablespoons sugar, or to taste
1 cup low-fat vanilla frozen yogurt, slightly softened
1 cup chocolate low-fat frozen yogurt
4 tablespoons light whipped topping
1 tablespoon grated semisweet chocolate, for garnish (optional)
1. In a small bowl, mix the raspberries and sugar together, smashing the berries against the side of the bowl with the spoon.
2. Place the softened vanilla frozen yogurt in the bowl and swirl in the smashed raspberries.
3. Divide this mixture among 4 parfait glasses. Spoon the chocolate frozen yogurt on top. (The parfaits can be made in advance and stored in the freezer.)
4. Just before serving, garnish each parfait with a dollop of whipped topping and a sprinkling of grated chocolate.
