Curried Brown Rice with Dried Fruits
1/2 cup finely chopped onion
1 teaspoon curry powder
1 cup brown basmati rice
2 1/4 cups water
1/4 cup chopped dried apricots
1/4 cup golden raisins
2 tablespoons chopped pistachio nuts
salt to taste
2. Add the rice, water, apricots and raisins. Bring the mixture to a boil, turn the heat to low, cover and cook for 40 minutes.
3. Using a fork, fluff the rice and add the pistachios. Season with a pinch of salt.
