2 cups carrots peeled, cut into 2-inch pieces
1/2 cup diced onion
1 cup diced mango
1 cup diced dried mango
2 teaspoons minced ginger
2 bay leaves
1/4 teaspoon grated nutmeg
1 tablespoon kosher salt, plus extra to taste
1/2 teaspoon coarse ground black pepper, plus extra to taste
2. Cook for one hour, stirring occasionally. Adjust the seasoning with salt and pepper.
