4 ripe persimmons
8 teaspoons brown sugar
1. Preheat the broiler.
2. Cut out the leaf end of the persimmon and halve the fruit crosswise.
3. Carefully slide a sharp paring knife around the fruit close to the skin to free the flesh (but do not remove from the skin).
4. Sprinkle 1 teaspoon of sugar on each persimmon half.
4. Put the fruit on a broiler pan and heat until the sugar begins to melt, about 1 minute or less. Too much heat will cause the fruit to become tough.
