Lemon Glaze
For the lemon glaze:
2 cups confectioners' sugar
1 large very fresh egg white
1/4 cup water
1/4 teaspoon lemon oil
1. In the bowl of an electric mixer fitted with a paddle attachment, combine the confectioner?s sugar and egg white. Beat on low speed until the mixture is smooth, about 5 minutes. With the mixer running, gradually add the water. Stir in the lemon oil.
Variations:
Vanilla Glaze: Add 1/2 teaspoon of vanilla extract instead of lemon oil.
Orange Glaze: Add 1/4 teaspoon of orange oil instead of lemon oil.
Almond Glaze: Add 1/4 teaspoon of almond extract instead of lemon oil.
