Yield: 4 servings
2 cups cauliflower florets (about ½ of a small head of cauliflower)
1 small potato peeled and diced, about 1/2 cup
2 teaspoons olive oil
1/8 teaspoon salt
1/4 teaspoon black pepper
1. Put about 2 inches of water in a large pot and insert a rack or steam basket into the pot. Place the potato and cauliflower florets into the rack or steaming basket and cover the pot. Bring the water to a boil and steam for approximately 15 minutes, until cauliflower and potato are very tender.
2. Use a food processor to puree the cauliflower and potato until very smooth.
3. Add the butter and generously salt and pepper to taste to the mixture in the food processor. Pulse a few times to combine well.
