Basic Bran Muffins
3/4 cup bran
3/8 cup sugar
3/4 teaspoon baking soda
pinch of salt
3/4 cup buttermilk
1 large eggs, well-beaten
1/2 cup raisins or dates, optional
2. In a bowl, mix together the flour, bran, sugar, baking soda and salt.
3. Mix the well-beaten egg with the buttermilk, and then add to the flour mixture. Fold in the raisins or dates. (Be careful to keep the mixing to a minimum -- a light stirring which will leave some lumps is fine. The dough should not be mixed to the point of pouring, but should break in coarse globs.)
4. Bake in the prepared muffin tins for about 25 minutes.
