Basic Barley

This recipe serves: 
Ingredients
3/4 cup water or vegetable stock
pinch of salt
1/4 cup pearl barley, rinsed
1 teaspoon extra virgin olive oil
salt to taste
freshly ground black pepper
Cooking Instructions
1. Bring the water or stock to a boil in medium saucepan. Add salt and stir in the barley.

2. Lower the heat and simmer, covered, until the barley is tender, about 25 to 30 minutes. Let stand for 5 minutes.

3. Toss with olive oil and season with salt and pepper.

Serving Size: about 1/2 cup
