5 cups peeled and cored pears, cut into chunks
3/4 cup water
2 tablespoons lemon juice
1/2 cup honey
1 tablespoon freshly ground black pepper
1. Place the pear chunks in a large, heavy-bottomed, stainless-steel pot. Add the rest of the ingredients.
2. Bring to a boil over medium-high heat, stirring occasionally. Simmer until the fruit becomes tender, about 20 minutes.
3. Puree in a food mill or blender.
4. Cool and refrigerate. Serve warm or at room temperature.
