Mango Chutney
1 large onion, finely chopped
1 tablespoon peeled, finely chopped fresh ginger
2 ripe mangoes, peeled and diced
1 jalapeño pepper, seeded and diced
2 tablespoons light brown sugar
1/4 cup cider vinegar
1 cup orange juice
1/4 cup coarsely chopped cilantro
salt to taste
freshly ground black pepper
2. Add the jalapeño pepper, sugar, orange juice and vinegar and simmer for about 20 minutes.
3. Stir in the cilantro, taste and add several twists of freshly ground black pepper and salt to taste. Cool to room temperature.
4. Store tightly covered in the refrigerator.
5. This recipes makes about 2 cups of chutney.
