1 pound fingerling potatoes
2 teaspoons olive oil
kosher salt to taste
1 tablespoon chopped, fresh parsley
1. Preheat the oven to 450°F.
2. Toss the potatoes, olive oil and salt together and spread them out on a baking sheet.
3. Roast the potatoes on the top rack in the oven until they are tender when pierced with a knife, about 20 minutes.
4. Sprinkle the potatoes with the parsley and serve.
