Country Ham with Grilled Figs and Fresh Cantaloupe
1/2 teaspoon sugar
pinch of cinnamon
1 cup peeled, seeded and cubed ripe cantaloupe
juice of 1 lime
4 tablespoons (2 ounces) fresh goat cheese
1/4 pound country ham, sliced into thin strips
1 bunch arugula, washed
2. Cut the figs in half, lengthwise. Mix the sugar with a tiny pinch of cinnamon and lightly sprinkle the figs in the mixture.
3. Grill the figs with the flesh side down until the figs begin to get soft, about 2 minutes. Transfer the figs to a plate and set aside.
4. Puree the cantaloupe in a blender or food processor until it is liquefied. Add the lime juice until a pleasant balance of sweetness and tartness is reached.
5. Place equal amounts of goat cheese in the center of 4 plates. Arrange 3 fig halves around the goat cheese on each plate. Place a few arugula leaves in between the figs. Sprinkle the ham over the figs and cheese. Spoon the cantaloupe sauce around the plate.
