Creamy Tasso Grits
1 tablespoon clarified butter
3 cups chicken stock or low-sodium chicken broth
1 1/8 cups stoneground grits
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1/4 cup milk
Garnish
1/2 cup finely diced tasso ham1/2 cup finely diced red peppers
1/2 cup finely diced green peppers
1/2 cup minced green onions
2. Whisk in the grits and salt and pepper. Return to a boil and simmer for 35 to 40 minutes, until the grits are fully cooked and soft. Add water, if necessary, to continue cooking the grits. Stir in the milk and cook for another 5 to 10 minutes.
3. In a separate pan, saute the tasso ham, add the remaining garnish ingredients and saute together for 2 to 3 minutes more. Stir this into the cooked grits.
