Citrus Salad with Orange Vinaigrette
For the salad:
8 cups bibb lettuce2 oranges, peeled and sectioned
2 grapefruits, peeled and sectioned
1 kumquat, sliced thin
1/2 cup dried cranberries
For the vinaigrette:
4 tablespoons orange marmalade4 tablespoons white wine vinegar
1 teaspoon chopped, fresh chives
1 tablespoon chopped, fresh tarragon
salt to taste
freshly ground black pepper
2. In a separate bowl, mix the marmalade and vinegar together. Add the chives, tarragon and season with salt and pepper to taste. Drizzle over the salads.
